The number of people that I get to my site is all over the place.  Sometimes I only have 30 people other times I get 300.  What is making it change so drastically?  You can take a look at it but I don't thing it will help.  How can I get more consistency?

Do you have google analytics? If so, a good way to fins a why could be analyzing the statistics. when they go? from where? etc.

Yes, I would suggest you to get your hands on Google Analytics and implement it on your site. First, it's free. Secondly, the information that it provides can help you a lot in understanding the traffic that your site receives and let you know what type of marketing that you do is working for you.

You can also buy pay-per-click ads like Google Adwords or Yahoo ads. However, to get optimal results, you need extensive keyword research to find the right cost-effective keywords.
