I`m not an expert in the food industry by any means but I can suggest starting out small and local.  Why not make and package your dressing to sell locally?  You especially need to keep it selling to the customers who liked it when you had the restaurant.  Start small to build up momentum and sales.

Even if you`re buying bottles in small quantities and printing labels on your home printer, you`re doing something to keep the product going.  As sales grow, you can invest more in the company.  From the business stories I`ve read, this is how a lot of food companies start out.  Sell to your neighbors and expand from there!

Steve is right on; check out this story in Fortune Small Business last month about Bear Naked and what she/they did to get it going and how they kept it going ... amazing stuff (went from home kitchen to selling out to Kellogs for 60 million in five years) and I know you can do it!

These guys are on point. It sounds like you've got a great product, you've already done all the testing having used it at the restaurant, and you got great feedback. Definitely start selling to neighbors and friends b/c they probably already know about it and love it. You could also try finding farmers' markets or small health food stores who would consider carrying your product. Good luck!
