Sounds like you should start with is a co-packer or contract manufacturer. Basically look for someone who is willing to make small runs of your product. They produce and pack small runs of your sorbet and then you store, sell and distribute it.

This may be more expensive per unit at first because of the low quantity but your startup costs are much lower than opening your own factory.
