Is it possible to do a trial?  Perhaps you could pick 2 different weeks and on one week have a mixture and on the other just stick to one type.  The sales figures should then give you the answer.

Are you making these items, or reselling them?  Do you sell these items already and are just looking to expand your current business?  Perhaps the best way to solve this problem is to think about what the potential consumer would like most.  Try picking specific places where you would like to sell and ask the manager/owner first if they would let you sell there and then if they would allow you to survey some of their clients.  Watch the people that go by.  Ask them some questions, like what types of items would they be interested in purchasing if they could buy something right there.  This would give you a starting point- maybe you'll learn of some great, gaping need that's just waiting to be filled!

I agree with doing a trial. It's always good to diversify as market people are whimsical and impulsive. Make sure you have a card you give to people who purchase so they can contact you if they want more outside of the markets as well as purchase from your website. In this way you will build a database of customers so if you don't show to the market or they move out of town you still have a business.
