why not take name suggestion from name suggestion company they provide you catchy and meaningful name for your japanese pan cake.

Asian Pancake House

Japanese House Pancakes

Cherry Blossoms Pancake

Mia’s Japanese Pancakes sounds good to me. This is simple and can be a household term for it’s easy to memorize, and can be easily associated to the product you are planning to sell. Monk’s Pan is okay and can be interesting, too. But just like what the others here have said, not everyone is familiar with it and only some bother to know about the meaning of a certain establishment’s name. At the end of the day, what matters most is that the customers remember your goods and won’t have a hard time recalling your business name.
