Vegan pumpkin muffins

Over the weekend I found a great recipe for pumpkin muffins that use no eggs, no butter, no animal products at all. I tweaked it just a tiny bit and they are delicious.

Ingredients:

  • 3 1/2 cups all-purpose flour
  • 2 cups packed dark brown sugar
  • 2/3 cup white sugar
  • 2 1/2 cups pumpkin puree
  • 1 cup vegetable oil (I used Canola oil)
  • 2/3 cup coconut milk
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 1/2 teaspoon ground nutmeg
  • 1 1/2 teaspoons ground cinnamon
  • 2/3 cup flaked coconut
  • 1/2 cup raw walnuts, chopped
  • Muffin topping (optional) pumpkin seeds, sunflower seeds, or more chopped walnuts.
Preheat oven to 350. Mix all ingredients in a large bowl. (Fold in nuts and coconut at the end). Pour into paper-lined muffin cups and sprinkle on your topping of choice. Bake for 25 minutes. Yields 24 muffins.

Those sound wonderful! I bet I could substitute gluten free flour. I actually have all of those ingredients on hand!

I was actually thinking of trying to make these with a different type of flour. Perhaps an oat flour or spelt flour. Let me know if you make them, and which flour you use :-)

What a great recipe.  Sounds yummy.  I`m going to try it.  Where did you find this recipe?

I`m actually going to be running a contest to put together a kid friendly cook book as part of a product pacakge starting in January.  I`m going to be requesting such receipies for the book from people and will try them out on my 22 month old.  Would love to know where you found this one.

The muffins really are very tasty. I hope you enjoy them :-) I found the original recipe at allrecipes.com.

I go there a lot to find ideas to begin with. Also, cooks.com has some good stuff. I found a recipe there to make a completely non-dairy "cream of musroom" soup that I now use in my green bean casserole.
