OK, I`ll bite . . . what is an elephant ear as you use it?  I know it as a very large plant growing from a tuber which likes moist soil and sun.  The leaves are huge -- up to 6 feet across.  As far as I know, it is not edible. And no, it did not come from an elephant!

It`s like a fried dough thing with sugar and salt - giant churro.

I never saw them before I went to the Portland Zoo.

nhgnikole... Your pretty close... just no salt. Typically it`s a flat donut with assorted toppings. There`s a picture of an elephant ear found here... Although, I must say the elephant ear in this photo is no where near the quality and size of the the ones found at Portland`s Saturday Market! They are often topped with jelly, cream cheese, or any other delicious edible on toast type product.

That was a brain fart on my part ... it`s typically sugar and cinnamon.

Sounds good for my ever expanding hips -- the elephant ears I know can`t even be used for lettuce wraps!
