Hello, my name is Jeremiah. My wife and I are new to this site. We are here to gain knowledge of starting our dream business. We are still pretty fresh in our idea, so we really do not know anything about how to start this business. We would like to open a Peruvian restaurant in the Seattle area. My wife is from Lima, Peru and when I first met her was the first time that I experienced Peruvian food…I am in love with it now…it is completely different from Mexican food that I am used to eating. Here in Washington there are a lot of Mexican restaurants…some which do pretty well. I thought it would be a good risk to start a Peruvian restaurant because it is unique and people like to try different foods as well there really isn’t much competition when it comes to Latin American restaurants. In general I would like to start off small like a sit down diner setting then if the business becomes a success I would like to make a more upscale cuisine style restaurant. SO that is a little about my dream. I am definitely open to ideas and suggestions- please. Thank you

Ah ...that is the restaurant Chef Emmanuel Piqueras came from. He opened a Andean (Peruvian) restaurant here in Kirkland WA called Mixtura. I really like the concept. I just don`t think I can get the financing for that class of restaurant yet. I have heard that both Mixtura and Andina are very successful. Thank you for the link J. There is always room for one more Peruvian restaurant in the Great Northwest!

From what I`ve seen, and then, reading many topics on SuN about restaurants, I`d suggest that the first step should be to work in a restaurant. The main and biggest problem is the logistics: how much food to buy, what to prepare, inventory, wait staff, bussing, cooking, and cleaning.

The specific hardware (building, equipment, utilities) can be fairly obvious to figure out. But without knowing through experience, it`s going to be very hard to develop a business plan in relation to the soft skills and materials (ingredients, food storage, food safety, quantities, menus, etc.).

I agree. I havent worked in a restaurant before, My wife has as well my brother in law has been a restaurant cook for 13 years. This idea is more long term. We have other business ideas as well, or should I say my wife does. She is very business motivated, unlike me I need that extra push because I am optimistic and skeptical. Or it is more that I have that "fear" that everyone else gets when planning on or has just started a business.. So I am thankful that I have found this site to learn from the others here. I spent about 5 hours last night just reading the forums...I have to say that all are very friendly here and helpful. Its not everyday you can go to a forum and feel the possitive energy. The key is to obsorbe that energy and put it to use. Thank you for the feed back, I hope to keep in touch with this community and learn something from all of you. - JP

Hi JP, and welcome to the fourm. A Peruvian restaurant sounds like something really unique. I`ve never had Peruvian food, so I`m sure I`d be interested!
