Hi,

I`m planning on coming out with a small line of Teriyaki sauce.  I`ve been researching both glass and plastic 12 oz bottles.   But, I just realized that I may need to sterilize the bottles.  My product obviously contains quite a bit of salt and sugar so I don`t think anything can grow in it.  Is it necessary to sterilize the bottles?  If so, how do I sterilize plastic bottles?  Is there a concern of the plastic leaching into the sauce?  What is the best way to sterilize glass bottles?  (I could do either hot or cold filling)

Any guidance or suggestions would be greatly appreciated!  Thanks!

I think you need to take this question to professionals.. I think an un-professional advice in such a field will cause troubles
I think you also need an authorization from the department of health in order to sell food (am i right?)  You could try and asking them

find a co-packer near you. they will take care of everything but the sauce.

Check with your state Dept of Ag. They will be able to guide you and help with whatever licenses you need to manufacture and package the product(s). If you are using tomato products in your sauce, I believe there are special guidelines for doing so.

You could boil the bottles, use radiation, or in some cases UV light. But the bottom line is that DipLady has the more important point: You`ll probably need a certification and FDA approval to validate and verify that the bottles are indeed sterile.
