I am trying to raise seed money. I am currently employed and will not be able to just quit and run my start-up without covering my basic personal expenses. Is it fair/ok to include a minimum wage in an initial investment? If so how much approximately?

The financial portion of your business plan should include the expenses for "people". If that is going to be you - then yes, your "salary" should be included.

As to how much, I would use the amount the business would have pay to someone else to do what ever you will be doing.
