I`m looking at starting an Offsite Data Storage service for my current clients - I am a web developer - and am wondering whether I need insurance for liability and what type of clauses I should have in my contract - any thoughts anyone?

In terms of the contract, call your lawyer - or find one.  If you knew what the contract should say, you would not be asking.  The "help" that you will get from the non-lawyers here won`t be good enough.

Take the contracts or disclaimers used by your competitors when you go to talk to your attorney and insurance agent. That will help them understand your industry.
