I think the best approach right now is to make it work with what you have at the start. Then look for additional funding to scale. This will be a lot easier when you demonstrate revenue and early stage profits.

I know that this is difficult but if you think hard enough I'm sure you can make it work.

You may be able to rent restaurant kitchens after hours.  It would save you money and you can test out your products.  I know that's how Naked Granola got started.
