FYI:

Check out Crescent City Beignets out of Houston that has tried the same concept. As a matter of fact I was very close to buying a franchise.

I am not trying to give advice, just trying to get some market research that could be helpful to you down the road. See what you can find on them and hopefully you will gain some insight.
