Hi,

I make dip mixes (as well as dessert mixes and microwave pork rinds). I`m not happy with any of the powdered cheeses I`ve tried in making a Cheesy Bacon and BLT dip mix. My cheese powder is not strong enough, not enough cheese flavor. Also, when bagged with the imitation bacon bits, the oil from the bits leech into the cheese powder and make it look unappetizing. The first batch I tasted was wonderful. However, after being in the bag (of blended mix) for a few weeks, it loses it`s flavor. The cheese and bacon flavors aren`t nearly as strong as when it`s first blended and bagged.

I`ve tried the actual cheese used by Kraft Macaroni and Cheese dinners, but it just isn`t strong enough for dip mixes, at least not according to my taste. Neither are several other brands I`ve tried. I know there is a better cheese powder out there suitable for this purpose because I`ve tasted a few dip company`s versions of these mixes and they are really good. All of my other dip mixes are great, but these are two popular flavors that I haven`t yet perfected. Anyone have any ideas or suggestions?

Gosh I don`t think you`ll get many answers. There are two ladies who make dip who belong to this forum. You should contact them!

Thanks, guys. I feel awkward contacting them because they would view me as a competitor. Which I would naturally understand.

I know this is an old post, but haven`t been here for a while.  If still interested, try:

1.  Edlong - they make cheese flavors that are very strong
2.  Sartori - product called Intensaclub, has very strong cheddar flavor
3.  Cheesetone

It gives the special improvements to the recipe,it cuts more smoothly, even though it`s creamier, making it more like the dairy equivalent.Cheese is a powerhouse of nutrients and an ingredient with rich functional and textural properties, yet it is added to foods largely to augment flavor.

I have never heard about cheese powder at all. Is it looks like a grinded cheese or what? Do you have a photo of cheese powder may be? Very interested..
