Hi everyone, long time no post! As some of you already know, we are always looking for ways to push the boundaries of artisan chocolate. As we plan and prepare for our upcoming season we thought we would ask SUN the question:

What chocolate needs are not being met in your life? (If anything was possible) All ideas are good ideas, thank you in advance for your input!

Okay - but remember you asked...

Fat free, sugar free, caffeine free, good tasting, high quality dark chocolate.

If make it, I`ll buy it by the case.

I just bought a box of amazing chocolates from a Portland, Oregon chocolatier called Moonstruck Chocolate Co. Amazing artisan work.

RDG,

We are experimenting with methods to reduce the fat by about 30%, through supplementing some of the dairy with other ingredients.

It’s a good start and we are excited about the upcoming season. Thank you for the post!

Oh, don`t take away my FAT!

I like fruit in my chocolate ...

Rasberries and dark chocolate (like a center ribbon of it)
Orange and milk chocolate (with bit of orange stuff is SO GOOD)
I had this one bar with blueberry bits in chocolate.

I also never see enough white chocolate, which is my favorite ... I`d love some white chocolate truffles with lemon filling in them, please!

Don’t worry Nikole we are just experimenting at this point.

Agreed fruit and chocolate are fantastic together, big fans of Raspberry and Dark chocolate, and use that combination in a chocolate we make with fresh raspberries and a crisp whole almond.

And if you like blueberries, Blueberry Port was one of our very first truffles, a pairing of local Blueberry Port with a rich and creamy Peruvian 68% dark chocolate ganache, garnished with a whole Maine blueberry.

I guess what I am realizing is that it may be more of a question of distribution than of new products…
