It would also be wise to discuss your shipping packaging with local representatives of the company you plan to use as the primary shipper (FedEx, UPS, etc.) and/or other shipping/packaging specialists.  You may need to determine if the shippers have special requirements for the shipping of fresh food items.

Some friends who own a nursery found meeting with UPS and FedEx very helpful in determining the best manner to ship life plant materials.

My bad on not seeing the frozen bit...but I can tell you from personal experience that Caroline is ABSOLUTELY LOVELY as is her staff.  I`m sure she`d be willing to have a chat.

Not sure how it would work with your frosting - but I`m a HUGE fan of Carnegie Cheesecakes and they come in a sturdy shrinkwrapper then placed inside a sturdy corregated cardboard box.

This is a bit past the discussion date - did you ever find a solution?
