How many undiagnosed Celiacs are there in the SUN community?

Several years ago I had the blood test and it came back negative. My doctor joked, "Not only do you not have celiac disease but you failed the test horribly." I don`t recall hearing before that I could be a "silent celiac." Hmmm. My mother had a lot of the classic signs when she was finally properly diagnosed several years ago. The new diet has helped her immensely. And, typical of her giving nature, she is quite involved with Celiac Disease Foundation [ celiac.org ]. If you send an email to the organization, she is the first one to see it and will likely respond. She frequently accepts phone calls from people in desperate need of guidance, arranges dinners at local restaurants that are GF friendly, participates in email discussion lists, etc. Not long ago I was in a health food store in Oregon and overheard a conversation between a clerk and a customer who was newly diagnosed with celiac disease. I gave the woman my mother`s phone number, knowing that she would be happy to help, even though my mother lives in California. Knowledge is, indeed, power.

I was undiagnosed until about six months ago and switching to a celiac diet has helped me out in so many ways.

Just to let everyone know Whole Foods and Trader Joe`s are Celiac friendly.  Just go up to the Concierge`s desk and ask for a list of Gluten Free foods they have.

I wonder how many people who have the symptoms of celiac disease and casein allergies would not have them if the food we eat weren`t so polluted with chemicals. 

For instance, the making of wheat flour is a study in chemical treatments - the wheat seeds are dipped in anti fungals, then as it is growing, the wheat is treated with insecticides.. The harvested wheat berries are sprayed with insecticides again in the holding tanks, and then when the wheat is milled, the parts with the vitamins and minerals are removed.  At the end, the resulting flour which is now completely polluted and without nutrients has synthetic vitamins added to it to "enrich" it..  Synthetic vitamins are created from petroleum products...  and it`s the same with pasteurized milk.. the cows producing the milk are raised in congested, stressful environments, doused with hormones and antibiotics, and then the polluted milk they produce is put through a pasteurization process that destroys the natural enzymes that help humans digest it...  It`s no wonder that bread and milk make people sick..
