Hair Salon Forecast Help

I've been working on a plan for a start up hair salon akin to a Fantastic Sam's type establishment, but my stumbling block has been how to estimate how many of each type of service I can expect to sell on an average week.  Obviously, I know it depends on how well the business works, etc, but I gotta have some sort of average scenario estimate.  Any ideas or suggestions you all have would be massively appreciated!!

Have you made your assumptions on the number of customers you intend to have based on your market research? That would give you a good starting point and then break out assumptions on services. You should be OK with services even though coloring, straightening, highlighting etc... are much more than cuts; because you still have minimal CGS. You will need to break down CGS for products though.
