I`m really into quick, simple, healthy recipes. So you will probably see me posting this type of recipe more than anything else. This may not be a masterpiece, but it`s tasty and helps you get another serving of vegetables :-)
2 tbsp olive oil
1 tsp garlic, minced
1 tbsp butter
1 lb asparagus spears, trimmed
grated parmesan cheese (approx 3 tbsp)
salt and pepper to taste
Use medium to large sized skillet, melt together butter and olive oil. Add garlic and sautee over medium heat for a couple of moments. Add asparagus spears and sautee for 10-15 minutes, or until your preferred tenderness. Drain off excess oil (or just remove asparagus from the pan) and sprinkle with desired amt of parmesan (I used about 3-4 tbsp) salt and pepper.
S`good stuff, and fairly good for you, too.
