Easy Asparagus

I`m really into quick, simple, healthy recipes. So you will probably see me posting this type of recipe more than anything else. This may not be a masterpiece, but it`s tasty and helps you get another serving of vegetables :-)

2 tbsp olive oil
1 tsp garlic, minced
1 tbsp butter
1 lb asparagus spears, trimmed
grated parmesan cheese (approx 3 tbsp)
salt and pepper to taste

Use medium to large sized skillet, melt together butter and olive oil. Add garlic and sautee over medium heat for a couple of moments. Add asparagus spears and sautee for 10-15 minutes, or until your preferred tenderness. Drain off excess oil (or just remove asparagus from the pan) and sprinkle with desired amt of parmesan (I used about 3-4 tbsp) salt and pepper.

S`good stuff, and fairly good for you, too.
I originally found this recipe at allrecipes.com, and modified it just slightly. Enjoy!

Ed marinates the asparagus in a mixture of olive oil, pepper, sea salt and lemon juice (or wine or herb-infused vinegar depending on what is around). He then grills them of the BBQ and tosses a little parmesan on them before serving.  Heavenly!

YUMMMMM!

I Love Asparagus! I will definitely give this a try.

While traveling last year we happened to stop in at a restaurant that looked inviting and found that they served fried asparagus as an appetizer. It was to die for! (Sorry, Christina, not that healthy for you and I also try to avoid fried foods as much as possible, but, it`s a nice treat once in awhile.)

On occasion, we do this at home or do fondue with it. We just use an off the shelf coating/batter mix, dip the spears in the batter and place them in the deep fryer, it only takes a couple of minutes per batch. They are awesome dipped in Ranch Dressing! It has been fun introducing this to other friends when we are entertaining!

Mmmm, Jeff, grilled asparagus is delicious!

Since we had to give up our BBQ for lack of outdoor space, I`ve just been roasting my asparagus at 425 for about 5 minutes or so, drizzled in a little olive oil and s&p.

Sometimes I`ll add a little drizzle of balsamic beforehand, or pour some bechamel over the top afterwards (when I`m feeling like indulging).

Yummm, I agree once we started bbq-ing asparagus, we`ve never gone back. I usually just spritz it with olive oil before putting it on the grill and then add some freshly grated parmesan when ready to serve. Sometimes when we have guests over, I`ll mix up a chipotle aoli and spoon on top of the grilled asparagus which is really good, fattening but good.

It`s been awhile since there`s been a posting here, but I`m too lazy to use my gas grill because the igniter broke and you have to reach all the way in with a lighter or match.  Someday I`ll just get rid of the thing.  Instead, I use my Foreman Counter top grill to do the asparagus!  If you just spritz them a bit with the olive oil or marinade, you get the taste.

Also, olive oil is good for your heart!
