The following came with a Farberware electric waffle maker. I used to make buttermilk waffles, but they were a bit too heavy. Some folks like light waffles, similar to frozen waffles. These are very good, and you can experiment with the ingredients to make them heavier if you choose.
  • 5 Tablespoons melted butter (cooled a little and set aside)
  • 4 eggs, separated (that means yolks in one place, whites in another)
  • 1 cup milk (we use half & half)
  • 1/2 teaspoon vanilla
  • 1 Cup all-purpose flour
  • 1/2 teaspoon salt
  • (Optional) 1/2 teaspoon sugar
  1. With and electric or hand mixer, beat the egg whites to a stiff peak and set aside.
  2. Beat the egg yolks in a different bowl, large enough for the overall batter.
  3. To the egg yolks, add milk, vanilla, and melted butter. Mix well
  4. Combine flour, salt and sugar, and add to the egg-yolk mixture.
  5. Mix until you have a smooth batter.

  6. Use a rubber spatula to GENTLY fold in the egg whites.
    (To "fold" means put in the whites, use the spatula to lift the right side of the batter in the bowl and flip it into the middle. Then lift the left side of the batter and flip toward the middle. Turn bowl 90-degrees and do it again until the whites are equally distributed.)
  7. A few small lumps are okay.
  8. Cook about 3-1/2 to 4 minutes (or set the iron on well-done and cook until the light goes out).
Makes approximately 8-10 waffles. Don`t over-mix the egg whites! (You need them to provide air pockets in the batter.)

Variations:
  • Use half milk and half water, or...
  • 1-1/4 cup flour for heavier waffles
In certain remote areas of the country, some people serve these with a combination blend of maple syrup and Jack Daniels.
Must be over 18 or have permission from a physician, not for sale in normal places, not responsible for lifting heavy equipment or driving industrial vehicles pursuant to ingesting this syrup.

Well, the top quality whiskey together with top quality maple syrup probably should help. :-D

Remember that you`re whipping the egg whites, not the Jack Daniels!!

Oh man, I can`t stop laughing about the Jack and syrup ... next thing you know, it`ll be the next college craze! Alcohol AND a sugar high. Serve in a warm shot glass!

Take 2 pieces of French toast, with syrup, and call 911 in the morning.

Is there are way to cook waffles without a waffle iron?  Could you use the recipe for pancakes?  Can I substitute champagne for whiskey?

I tried the batter as pancakes. The problem is that waffles have a much heavier texture than pancakes, so they make pretty heavy pancakes. On the other hand, for typical waffles, these are a lot lighter than normal.

Champagne would work, I think, but would make for Girlie-Mon waffles. Of course if you`re a girl, that wouldn`t be a problem. On the other hand, Real Men use the Jack Daniels, which would be problematic if you were a girl.
