I hate to see a forum on food that does not have alot of posts so I have taken it upon my shoulders to enlighten the few that wish to amaze the many with another summer BBQ recipe.

So for you mainlanders that can’t make it to the Islands this summer,  this is a great Beef BBQ that will leave your family, neighbors and friends wanting more(but don’t give it to them unless they beg). This is to be prepared 1-2 days before your BBQ.

Now here is the secret sauce:

Make 2 days before the BBQ
(This is enough for about 6-8lbs. of meat)
2 cups Soy Sauce (use Kikkoman’s)
1 cup chopped garlic
1- cup brown sugar
1 cup water
¼ cup fine chopped/grated ginger
½ cup chopped green onions
Chili Garlic Sauce – ¼ cup sweet with heat (this is in the asian section of most markets, it has a green plastic top)

Take soy sauce and water and place in a pot and heat to a simmer then place in sugar and mix till dissolved. Add in the rest of the ingredients, bring back to a simmer for 2-3 minutes, this infuses the ingredients. Turn off and let sit till cool (that is why you make the marinade 2 days before). You can place it in a container like a Mason jar and place in the fridge.  This marinade will last for quite a while.

The Meat:
Purchase boneless short ribs that have a 1 inch cut and are about 3 by 5 inch strips.  You can get them at a bulk store like Costco or Sams.


24 hours before the BBQ.  Take the meat and get either a large tupperware or the large 1-2 gallon plastic baggies.  Put the meat into the container and poor in enough marinade to barely cover the meat. The next step is called Lomi-Lomi in Hawaiian, which means to massage the meat (wash your hands first).  What you are doing is helping the marinade to break down the enzymes in the meat, do this for just a minute.  Then place the container into the fridge and let sit till the morning (if you want in the AM you can Lomi – Lomi again).

Time to BBQ – This is a FAST cooking meat…because of the sugar if you leave it to long it will burn, so place on the grill for just 2 minutes per side.  Of course the best way is to test one piece yourself and make sure you get the hang of it.  This is called the Grill Masters Prerogative.

Aloha!

I am a Haole, but 6 FANTASTIC years growing up were spent on Oahu, so I have very soft spot for the islands.  Thanks for the reminder, yes it is time to go back.  Thanks for the recipe!  We grill ALL THE TIME so I can`t wait to take this one for a test drive

Well, here it is September and I don`t see any comments on grilling.  How was everyone`s summer? 

Take a touch of olive oil & butter in a pan, add some garlic `til cooked, add a 1/4 cup of lime juice and 1/4 cup or so of water (it`ll sizzle, so be careful), sprinkle in some parsley and basil.  OK, now use it as a marinade until you`re ready to cook your salmon fillet or chicken, which can be done on the grill, under the broiler, or in the oven.
