non-disclosure/non-compete business partners

Consider this scenario: I'm a door to door dry cleaning service provider, but don't have the resources to actually do the cleaning. So, I want to "hire" a dry cleaner who has the equipment/resources.  I go into one of my neighborhood dry cleaning stores and tell them about my idea and that I would charge my customers enough to not only pay them, but also make a profit. And say, the dry cleaner absolutely loves my idea and decides to steal  it.

 

How do I protect myself from something like this? Is it the norm to get the "service provider"/partner to sign both a non-disclosure and a non-compete before I even discuss my idea with them? If so, can anyone point me to samples?
